Cranberry Oatmeal Bars




















Ingredients:
1 cup flour
1 cup quick cooking oats
1/2 cup packed brown sugar
1/4 tsp salt
1/4 tsp soda
1/4 tsp cinnamon
6 T melted butter (I used 3)
3 T orange juice
Cooking spray

1 1/3 cup dried cranberries
3/4 cup sour cream
1/2 sugar
2 T flour
1 tsp vanilla
1/2 tsp grated orange rind
1 large egg white, lightly beaten

Directions:
1. Preheat oven to 325
2. To prepare crust, spoon flour lightly into cup, then level off with knife. Combine flour through cinnamon in a medium bowl. Mix well. Drizzle melted butter and juice over flour mixture, stirring until moistened
3. Reserve 1/2 cup oatmeal mixture, then press remaining oat mixture into the bottom of an 11 x 7 in baking dish coated with cooking spray.
4. To prepare filling, combine cranberries, sour cream, sugar, and remaining ingredients in a bowl. Pour over oatmeal crust.
5. Sprinkle remaining oatmeal mixture evenly over filling. Bake for 40 minutes or until edges are evenly browned. Makes 24 servings; 133 calories a serving

Pear Pie with Streusel Topping

This is Lucas' favorite dessert:

Ingredients
2/3 cup flour; divided
1/2 cup sugar
1/2 tsp cinnamon
1/8 tsp salt
3 T fresh lemon juice
6 medium pears; peeled, cored, and sliced
1/2 pie crust (just bottom)
1/3 cup packed brown sugar
3 T chilled butter

Directions
1. Combine 1/3 cup flour, sugar, cinnamon, and salt to large bowl. Add lemon juice and pears; toss to coat
2. Arrange pears over pie crust
3. Combine remaining flour, brown sugar, and butter in a food processor; mix until mixture resembles coarse crumbs; sprinkle over pears
4. Bake at 375 for 1 hour

Serve warm with ice cream!
